Between jobs, I ate Kumamoto ramen today.
Kumamoto Prefecture is next to Fukuoka Prefecture, so the base is pork bone soup. Hakata (Fukuoka) ramen and Higo (Kumamoto) ramen are similar, but the depth and attack are very different.
Kumamoto ramen often uses burnt soy sauce, which is spicier and smokier. While making a movie about Fukuoka, I eat Kumamoto ramen...
Well, both ramen are representative of Kyushu Island. They are delicious!
