Japanese croquettes like in the mangas!

Potato 500g
Minced meat 300g
1/2 onion  
1 tbsp white wine
1 tbsp soy sauce
1 tbsp sugar
1 egg
Flour and Panko

Cook the potatoes in salted water and mash them. 
Cook the minced meat in a pan and add salt, pepper, a little white wine, soy sauce and sugar.

The most important thing is to make up the croquettes with as much mashed potato as minced meat. This is a butcher's tip, so it's a safe bet. 
Indeed  in Japan, the croquettes are sold in butcher shops so they are really delicious!

Mix the puree and the mince well, make dumplings as shown in the photo, rub them with flour and beaten egg, then coat them with Japanese breadcrumbs, the panko.
Finally, fry them in a pan.

The accompaniment to the Japanese-style croquettes is finely julienned cabbage. It can't be anything else! I can't tell you why, but that's the tradition, full stop.
The crispness of the croquettes and the lightness of the cabbage is a typical Japanese value.

You can season the cabbage with mayonnaise, olive oil or sesame sauce, it's up to you because it's all good. Don't skimp on the amount of cabbage.
