Recipe "Nanban of sardines"

10 small sardines
Salt and pepper to taste
A dash of potato starch
A dash of oil

<Nanban sauce>
1 tbsp water (or soup stock)
2 tbsp soy sauce
2 tbsp vinegar
1 tbsp sugar

<Tartar sauce>
1 boiled egg
3 pickles
1/4 purple onion
3 tblsp mayonnaise
Salt and pepper to taste
Lemon, to taste

Head and gut the sardines, wash them, open them by hand and remove the middle bone. When ready, dust the sardines with potato starch.

Combine the ingredients for the nanban sauce in a heatproof container and microwave at 600 W for 20 seconds to dissolve the sugar.

Finely chop the boiled egg, pickle and purple onion, add mayonnaise, lemon juice, salt and pepper to taste and the tartar sauce is ready.

Put enough oil in a frying pan to cover the sardines and deep-fry 1. Dip the sardines in the sauce, place on a plate and finish with a drizzle of tartar sauce! This goes great with beer.
