Preheat the oven to 200°C. Place the salmon and thinly sliced leek on a sheet of aluminium foil with salt and pepper, cover with a well-mixed sauce made from miso, mayonnaise, white wine, sugar and soy sauce, then cover with butter and close the foil.

After 30 minutes in the oven with the foil on, place the salmon and sauce in a frying pan, add the cream and mash the salmon while heating over a low heat.

Cook the pasta and add the baby spinach to the salmon cream just before it is cooked (for normal spinach, cook quickly and cut into pieces as required).

Add the cooked pasta to the sauce and toss to coat well, then finish with a squeeze of lemon, a little pepper and a drizzle of olive oil.
