In Japan, each region has its own ramen. These "local ramen" are as numerous as there are regions. An essential dish in the Japanese culinary repertoire, ramen is never constrained by the rules of controlled designation, which allows it to be sometimes simple and uncluttered, sometimes very creative.
In Fukuoka Prefecture, Kyushu, where Ippudo was born, tonkotsu ramen has long been a favourite. It is cooked with pork broth that has been simmered for a long time until it becomes a cloudy white colour. There are two types of broth-based ramen: either the soup is clear or it is cloudy. In the history of tonkotsu ramen, the soup was initially clear, but by serendipity a cloudy white soup was discovered. The result was delicious. Thus, eventually, the cloudy white soup became a standard of tonkotsu ramen.
